2 tablespoons lemon juice
1 teaspoon dried thyme leaves
1 tablespoon minced parsley parsley sprigs for garnish
1 package Holly FarmsŪ Prime Chicken Breasts or Thighs
1 lemon, thinly sliced
1/3 cup olive oil
Salt and pepper to taste

Preheat oven at 400°
Sprinkle the chicken with salt and pepper being very generous with the pepper. Use your fingers to carefully loosen the skin from the flesh of the chicken. Rub a pinch of pepper under the skin of each piece and then slip a lemon slice under the skin of each piece.
In a small dish, combine the olive oil, lemon juice, thyme and parsley.
Brush with some of the oil mixture and bake at 400,° brushing occasionally and bake until the chicken is cooked, approximately 25-30 minutes total cooking time.
Serve the chicken garnished with parsley sprigs and any remaining lemon slices.
Yields: 3-4 servings (3 for thighs and 4 for breasts)
Note: The lemon under the skin adds a great deal of flavor to the chicken. It softens during the cooking and is quite delicious.
