Garlic Bread:
1/2 C butter
1/2 C olive oil
4 tsp minced garlic

Sauce:
3 T olive oil
1C chopped onions
1 1/2 tsp minced garlic
1 14 can tomatoes, chopped
1/4 C chicken stock

French Bread, split long ways
8 0z goat cheese

Directions:
Directions:
Mix Garlic bread ingredients and spread liberally on French bread. Bake for 20 minutes at 300 degrees.

Sauce:

Cook onions, tomatoes and garlic in olive oil for 2-3 minutes. Add stock and simmer 20 to 25 minutes
Mound goat cheese in the center of a platter. Add tomato sauce mixture over goat cheese and serve with garlic bread
