1. Maida 1 kg
2. Gluten Powder 10 g
3. Milk powder 50 g
4. Lily Fat 100 g
5. Fresh Yeast 40 g
6. Water 500 ml
7. Bread Improver 2 g
8. Sugar 250 g
9. Oil 100 ml
10. Salt 15 g

1. In a bowl, take water, add maida, gluten, milk powder, bread improver to it and mix well.
2. Kneed the rough dough ( Mix till 3 - 5 minutes). Gradually add yeast and kneed again.
3. Now add sugar ( small grains)
We can not add sugar bura/icing sugar to this dough as gradually when sugar will melt, it will loose water and dough will develop its texture.
4. Kneed the dough till the sugar granules are almost incorporated and the dough turns smooth and lump free.
5. Add salt and mix well
6. Now add fat + oil and mix well. Kneed the dough.
7. You can add more milk/water, if you feel the dough is tight.
8. In case the dough is loose, add maida (50 - 70 gms), a little oil and kneed it. Place it on the platform.
9. Let the dough rest for 10 minutes and cover it with damp muslin cloth.
10. After 10 minutes, cut the dough in portions 300 gms each and let it rest for 10 minutes again.
11. Remove air from the portions and give it similar shape of that of the loaf.
12. If you have toast mould, place the loaf in the greased moulds or directly place the loaf on the tray
13. Let the loaf prove for 1 hour and if you have made it using milk, proving might take 3 - 4 hours.
