Ingredients: 1. Maida 1 kg 2. Salt 50 g 3. Oil 50 g 4. Butter (room temp.) 50 g 5. Chilled Icy Water 700 ml 6. Lily Fat 450 g

Directions:1. Take chilled water, salt and mix well. 2. Add maida(chilled), oil and butter and make a dough. 3. Dough should be tight and chilled. 4. Cover the dough with chilled wet cloth and rest for 10mins. 5. Roll the dough in rectangle flat sheet of about 8-10mm thick 6. Apply half the quantity of lily fat on the dough and then overlap fold it. 7. Now roll the dough again in rectangle sheet and add the remaining lily fat and overlap fold it for second time. 8. Rest the dough for 10-15mins covered with chilled cloth. 9. Repeat the overlap fold process and resting process twice without applying lily fat this time. 10. Rest the dough for 30-35mins by covering it with chilled cloth. 11. Roll the dough in rectangle shape, about 4-5mm thick. 12. Cut the dough with the help of pizza cutter into desired shape. 13. Fill the puff with its filling and seal it with water. 14. Grease the tray and set puff. 15. Preheat the oven at 240C for 10mins. 16. Water spray the puff and bake for 20mins at 240C and then 10mins at 220C. 17. Consume it within 1-2days. PUFF FILLINGS
