2-3 pounds of chicken pieces or 1 soup chicken, cut into pieces
1 large tomato, quartered
1 large onion or 2 medium onions
4 stalks of celery, thinly sliced
4 carrots, thinly sliced (I add more carrots)
Water
Salt, pepper and garlic powder
1 package of boxed kosher soup mix or 2-3 heaping Tbsps. soup base
Flour seasoned with salt, pepper and garlic powder.

Add first five ingredients to a 6-8 quart soup pot. Fill pot with water to almost the top of the pot.
Add a small palm full of salt, about a tsp of pepper and a tbsp. of garlic powder. Bring to a boil.
Reduce heat and simmer for 2 hours (3 hours if using a soup chicken). Take chicken out of pot and add soup mix. Simmer for an hour.

Coat chicken in seasoned flour and fry in a cast iron pan.

I put the soup in the fridge overnight for the fat to congeal. I remove the congealed fat before heating soup the next day.

This is my Mother's chicken soup recipe. I make it pretty close to hers but I cheat with the soup mix.
When I was pregnant of both my girls, the only food I craved was my mother's chicken soup and pears!
