2 cans Artichoke Hearts, mashed and drained
1 ½ cups of Hellman’s mayonnaise
2 cups of Parmesan cheese
1 small onion, finely chopped
12 oz. shredded mozzarella cheese

Preheat oven to 350 degrees. Mix all thoroughly. Spray Pam liberally in a 9x11 glass Pyrex pan.
Bake for 30 minutes. Serve immediately with crusty bread or raw veggies.

I have always found that baking this recipe in a glass rectangle pan works best.If you need to double it, bake it in two pans.

A Variation with Spinach: Add 10 oz. frozen spinach. Thaw and drain chopped spinach. Squeeze out spinach in paper towels to eliminate water until spinach is dry.
Add to artichoke mixture above with an additional ½ cup of Hellman’s mayo. Bake for 40 minutes at 350 degrees or until bubbly.
