1 c. quick oats
1 c. sugar
1/4 c. butter
1 egg
1 t. vanilla extract
2 rounded T. flour
pinch baking powder
pinch salt

Filling (optional):
1 c. semi-sweet chocolate chips
1 1/2 T. butter
1 1/2 T. milk

Yield: 8 dozen cookies

Preheat oven to 400ºF/

Combine all ingredients. Drop on foil-covered cookie sheets - 1/4 t. to make sandwich cookies, else 1/2 t. - about 2" apart. Bake 4-6 minutes, or until golden. Let cool on foil, then peel off.

For sandwich cookies, spread filling on bottom of one cookie and match with of of similar size and shape.


Filling (optional):

Heat chocolate, butter and milk together and stir until smooth (done easily in microwave). If mixture gets too stiff while working with it, simply reheat in short intervals.
