Directions:In a large bowl stir water, honey and yeast together and let proof about 5 mins. Once yeast is active, stir in salt and flour in ¼ C increments until dough starts pulling from sides and the sides of the bowl come clean. Leave stand for 5 mins. Knead dough until smooth and slightly tacky. Grease dough and bowl with olive oil. Cover with plastic wrap and let rise about 1 hour or until 2x size.
Punch down a little and cut in half. Form into two long baguettes by rolling them then give a twist to help them keep their length. Cover with plastic wrap and set aside for about 30 mins. Preheat oven to 400ºF and place dough close to the oven to take advantage of the warmth and help it rise. Once oven is ready remove plastic and reduce oven to 350ºF. Bake 20 mins.
In the meantime, slice cheese thinly. Melt garlic butter. Pull loaves out after 20 mins. and brush with the melted butter. Bake another 5-7 mins. or until it begins to turn golden brown. Remove and cool for 15 mins. to avoid damage to bread when slicing it. Cut ¾ of the way through, spaced about 1 in. apart. Brush garlic butter in between each slit and fill with cheese. Bake another 3-5 mins. or until cheese is completely melted. Serve hot. |
