2 C stewed tomatoes, or fresh tomatoes seeded, skinned, and chopped
½ C celery, chopped
¼ C onion, chopped
2 Tbs brown sugar

4 C prepared white sauce, see below

Simmer covered, the tomatoes, celery, onion, and brown sugar about 15 mins. Strain this stock into 4C white sauce and season to taste. Simmer on low until desired consistency is reached. Serve hot with croutons, chopped parsley, or basil.
 

White Sauce


Ingredients:

4 Tbs. butter
1 C milk
1 small onion, studded with 2-3 whole cloves
1 small bay leaf
nutmeg to taste
salt and pepper to taste

Directions:
Melt 2 Tbs. butter over low heat. Add 2 more Tbs of butter then stir milk in slowly. Add onion studded with cloves and bay leaf. Preheat oven to 350ºF. Cook and stir sauce with wire whisk or wooden spoon until thickened and smooth. Place in oven for 20 mins. to cook slowly. Strain the sauce and season to taste. Add a grating of nutmeg.

You could just open a can of Campbell's Tomato but, this has so much more flavour. Feel free to experiment with seasonings to really make it your own.
