GRIND BEEF, ONIONS, GARLIC
SALT TO TASTE, AND ADD RED PEPPER, CUMIN & CHILLI POWDER.

MUSH

USE BROTH FROM COOKING THE BEEF AND ADD CORNMEAL AND GARLIC. Chilli POWDER
CAN ALSO BE ADDED TO MAKE MillE FlAVOR. MUSH SHOULD BE SPREADABLE. SALT TO TASTE.

SPREAD MUSH oN CORN SHUCK:· THEN ADD A LAYER OF MEAT AND ROLL. TIE EACH
END. COOK IN LARGE PAN IN A MIXTURE OF WATER & BROTH (IF yOU HAVE BROTH
LEFT), OTHERWISE YOU CAN JUST COOK·THEM·IN WATER FOR AN HOUR.

THIS RECIPE WAS FROM AUNT PEARL. MY GRANDMOTHER MADE HOT TAMALES ALSO, BUT AUNT PEARL MADE AND SOLD HERS FOR MANY YEARS. THE FIRST PART OF THE RECIPE IS IN AUNT PEARLS HANDWRITING AND IT CALLS FOR BEEF FAT ALONG WITH THE BEEF....I CAN'T READ THE AMOUNT....SO JUST KNOW YOU CAN'T BUY VERY LEAN BEEF TIPS FOR THIS RECIPE!
