1lb Italian turkey sausage
1/4 onion, diced
2 garlic cloves, minced
1 1/4c. ricotta cheese
1 egg
1 1/2c. homemade tomato sauce
1 cooked spaghetti squash, scraped out
2/3c. mozzarella cheese
1T parmesan cheese
fresh basil

In skillet, cook onion until done. Add turkey sausage and cook completely. Add garlic and cook for 1 minute. Remove from heat.

Scrape out spaghetti squash.

In bowl stir in egg, parmesan cheese and sprinkle of pepper into the ricotta.

Preheat oven to 375. Spray glass baking dish w/olive oil and begin layering the mixtures. First, spoon about half of sauce on bottom of dish. Add cooked sausage then add the rest of the sauce. Top sauce w/ricotta cheese mixture, then add shredded mozzarella.

Bake until cheese is melted, about 15-20 minutes. To brown cheese, broil for 5-10 minutes, watch carefully.

Remove from the oven and let sit for a few minutes. Serve.
