1 hen cooked - remove bones

1/2 cup celery

2 cups of rice

Salt and Pepper to taste

Directions:
Cook hen until tender. Remove bones. Measure out 4 cups of chicken broth. Put chicken broth ( 4 cups) and celery in pot and bring to boil. Add Rice. Cook slowly until rice is done. Keep pot covered so rice on top gets done.

Chicken and Rice has always been a core dish for Sunday lunches or family gatherings. Mom would make it, however she would never eat the chicken. She only wanted the rice. She recommended using a fat hen - she said it made the broth better. I loved her chicken and rice.
