Combine the following in a large mixing bowl in the order listed below:

1 1/4 cup of corn oil

2 cups of sugar

3 cups of peeled and cut up apples (toasted a little)

3 well beaten eggs


In separate bowl sift:

3 cups plain flour

1 teaspoon soda

1/2 teaspoon salt

Add above to apple mixture along with 2 teaspoons of vanilla

Mix well by hand & bake at 325 degrees for 30-35 minutes in 13 x 9 pan sprayed with Baker's Joy or greased and floured

For Frosting:

Cream together 11 ounces of cream cheese, 1/2 stick of butter, 2 teaspoons vanilla, 16 ounces of confectioners sugar and 1 cup of chopped pecans.

Apply frosting to cake when it has cooled.

Linda Creel introduced this excellent cake to the family and everyone loved it! It has the perfect mixture of fresh and sweet - not too heavy. Excellent with coffee! It has now become a requirement for all large family celebrations. She tried different desserts and there was a family riot (hehe).
