1 lb. pork sausage
3 cups frozen hash brown potatoes (shredded)
¼ cup butter (melted)
12 oz. mild cheddar cheese (shredded)
1 onion (diced) – optional
16 oz. cottage cheese
6 jumbo eggs

Directions:
Directions:
Preheat oven to 375°. Lightly grease a 9x13 inch baking dish with Crisco. Cook sausage in a large skillet over medium-high heat until crumbled and evenly brown. Drain excess grease and set aside.

In the greased baking dish, stir together the frozen shredded potatoes and butter, lining the bottom of the dish.

In a large bowl, mix sausage together with cheese, onion, cottage cheese and eggs. Pour mixture over the potatoes in the baking dish.

Bake for one (1) hour, and let cool for five (5) minutes before serving. Refrigerate leftovers.
