2 tbls. butter
1 cup diced onion
1 cup diced celery
2 cups chicken, cooked and cut in pieces
1 cup diced tomatoes(not canned)
3 tbls. flour
3 tbls. oil
1 1/2 cups chicken stock
1 tsp. seasoned salt

2 cups mashed potatoes
1 9-inch pie shell, unbaked
parsley
paprika

Directions:
Directions:
Melt butter in large skillet. Add celery and onion and simmer for 2 to 3 minutes. Add chicken and cook until heated thoroughly. Mix in tomatoes. Combine flour and oil and add to stock to thicken. Stir into chicken mixture. Add salt and simmer several minutes. Pour into pie shell and "decorate" with mashed potatoes. Sprinkle with parsley and paprika. Bake in 350º oven for about 1 hour.
