1 ½ recipes of your favorite pie pastry
2 T oil
2 lbs chicken, cubed ( I use ground chicken or turkey)
¼ C sherry
½ C chicken boullion
½ tsp dried thyme
½ tsp dried sage
1 medium onion, chopped
3 tart apples, peeled and diced
applesauce and cinnamon

Brown the chicken in oil. Stir in the sherry and cook 2 minutes. Drain all liquid. Add broth and herbs. Simmer, covered, for ½ an hour until chicken is tender. Add onions and simmer 5 minutes longer. Add apples and cook 10 minute. Cool.
Roll pastry ½ inch thick. Cut out 7 inch rounds. Beat 1 egg with 1 T milk and moisten edges of circle. Put ½ C filling on each round and fold over to form a half circle. Crimp edges and glazed the pies with the egg wash. Cut 3 slits in the tops of each pie. Place on ungreased baking sheet.
Bake at 350º for 30 minutes or until browned. Serve with hot applesauce sprinkled with cinnamon.
