Pre-Fried Spices:
2 Tbs Coconut Oil
2 Tbs each Cumin, Pepper (whole or ground), Ginger, Fenugreek Seeds
12 Bay Leaves
20 Cardamom Seeds, cracked
5 Star Anise

Bulk Ingredients:
1 Tbs Coconut Oil
2 C each of diced caramelized onions, diced tomato, cubed meat.

Searing Ingredients:
2 Tbs each Paprika powder, Chili powder, Cayenne powder

Final herbs:
1 Tbs each Thyme, Garlic powder (Or Fresh)
1 tsp. Rosemary
3 Tbs of Lemon Juice or Vinegar

Directions:
Directions:
Add coconut oil to pan over medium heat, add the first batch of spices and fry until brown. Remove peppercorns (if whole), as well as the cardamom seeds and star anise. Add Onion to pan and sautée until dark golden brown.

Remove bay leaves, and then transfer fried onions to a bowl. Add oil and meat and second batch of spices to frying pan and sear over medium-high heat. Once meat is seared, add tomatoes, fried onions, lemon Juice, Thyme, Rosemary, and Garlic powder (or Fresh Garlic). Simmer until a liquidy sauce is formed.

Salt and pepper to taste. Serve over boiled potatoes, basmati rice, or with Naan bread.
