Ingredients: ⅔ C. Soy Sauce ¼ C. Packed Brown Sugar 1 Tbs. Cornstarch 2 tsp. Fresh Ginger root, finely chopped 2 Garlic Cloves, pressed/minced ¼ tsp. Crushed Red Pepper Flakes 1 lb. Boneless Pork Chops, cut into thin strips 2 C. Instant Rice, uncooked 1 Medium Red Bell Pepper, cut into thin strips ¾ C. Snow Peas, trimmed 6-8 Green Onions (with tops) cut into 1 in. pieces 8 oz. Bamboo Shoots, drained (or celery stalks if they can't be found) Sesame Oil

Directions:In small bowl, combine soy sauce, brown sugar and cornstarch; whisk until blended. Finely chop ginger root and press garlic cloves then add to sauce. Add red pepper flakes and mix well. Cut pork into thin strips, about ⅛ in, and add to soy sauce mixture; toss to coat. Cover and refrigerate 15 mins. to marinate.
Meanwhile; cook rice according to directions. Cut bell pepper into thin strips, about ¼ in., trim snow peas and cut green onions. Heat 1 tsp. sesame oil in stir-fry pan over high heat until hot. Remove pork from marinade and add to skillet; set marinade aside. Stir fry 1-2 mins. or until pork is no longer pink. Remove from skillet and keep warm.
Heat 1 tsp. sesame oil in same skillet. Add bell pepper, snow peas and green onions. Stir fry 2-3 mins. Return pork to skillet then stir in marinade and bamboo shoots. Bring to a boil. Cook for 3-5 mins. or until sauce is thickened. Serve over rice. |
