½ lb. Stewing Beef, cut small
2 Tbsp Butter
1 tsp. Minced Garlic
½ C. each Chopped Onion, Chopped Tomato, Chopped Cabbage
½ C. each Chopped Carrot, Diced Turnip, Diced Potato
1 Tbsp. Beef Base
6 C. Beef Stock
½ C. Medium Pearl Barley
¼ C. Nutritional Yeast
Splash of Red Wine (optional)

Directions:
Directions:
In 5 qt. dutch oven melt 2 Tbsp. butter over high heat. Stir in beef,
garlic, and onion. Cook until onion is tender. Stir in all remaining
ingredients except the barley. Season with salt and pepper. Reduce
heat to low and simmer for 45 mins.

Place barley in medium sauce pan with 2 C. water; bring to a boil and cover. Reduce heat to medium and simmer 15 mins. Add barley to soup; continue cooking until beef and barley are tender.

Personal Notes:
Often I will rinse the barley and then add it directly to my soup mixture; this reduces the amount of liquid when finished.

If using a slow cooker reduce amount of each ingredient according to cooker size. Also, I will sometimes remove tomatoes and cabbage to allow more room for important things like... more meat!
