1 lb. ground veal
4 or 5 sprigs parsley
1¼ tsp. salt
1 small onion
¼ teaspoon pepper
1 box chopped spinach, thawed and water squeezed out.
½ cup bread crumbs
¼ cup grated cheese
2 eggs

Dough:
4 cups flour
2 eggs
1 cup water

Filling:

Brown veal, parsley, salt, pepper, and onion until all of the water is gone. Add chopped spinach and then bread crumbs and stir to mix well. Add cheese and take out onion. Mix well. Turn off heat. Cool off slightly and add eggs one at a time.

Dough:

Make hole in flour and put eggs in. Gradually add water not too hard, not too soft. Knead and roll into ball and let stay for ½ an hour. Then knead and make into 2 balls. Let stand ½ an hour. Roll out and spread ½ mixture and cut out. Let stand till they dry out. (Flip halfway through drying)
