1 lb Roma tomatoes--coarsely chopped
½ bunch green onions--diced
1 small jalapeno-diced
⅓ bunch cilatro--diced
2 avocados--diced
1 can sweet corn--drained
1 can black eyed peas--drained
1 can black beans--drained
1 clove garlic--minced

For the dressing:

¼ cup vegetable oil
¼ cup red wine vinegar
1 package Italian dressing mix
2 tsp hot sauce

Directions:
Directions:
Combine the first ingredients together. Be careful not to mush the avocados and be sure to drain the canned items first.

In a small bowl, combine the dressing ingredients.Pour the dressing over the first ingredients and gently blend. Add salt and pepper to taste.

You can mix this up and eat it right away if you wish. However, if you keep it in the fridge for a few hours or even a day, the flavors mix together more and it tastes better.
