1/2 cup light tasting olive oil
1/2 cup white wine vinegar
1/2 cup lime juice
7.5 oz jar roasted sweet red peppers, drained and diced
3 green onions, minced
3 T. parsley, chopped
3 T. cilantro, chopped
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. fresh pepper
8 oz. Sharp cheddar cheese, chilled
8 oz. Pepper Jack, chilled
8 oz. cream cheese, chilled

Whisk first 3 ingredients together. Stir in peppers and add the next six ingredients; set aside. Cut the cheddar lengthwise then crosswise into 1/4 inch slices. Repeat with the other cheese. Arrange cheese slices, alternating, in a shallow dish. Pour marinade over cheese. Cover and chill 8 hours. Transfer to a serving plate when ready to serve - spoon any leftover marinade over the top. Serve with crostinis or crackers.
