Ingredients: 1# Ground beef Salt & Pepper (that's it nada mas) Grated cheddar cheese La Victoria red taco sauce (ketchup if you're under 40) Chopped Onion Diced Tomatoes Shredded Lettuce 1 Dozen Corn Tortilla's

Directions:Brown the ground beef with salt & pepper (Nanny always did it in the microwave - I can't make myself) Fry the shells in oil; just long enough to make them flexible for soft shells, until crispy for hard shells. Drain on paper towel. Fill the shells; meat first, then cheese on the hot meat so it melts, then the taco sauce followed by onions & tomatoes (the sauce underneath will help hold them in place) & finally the shredded lettuce, always on top to keep your hands clean. |

Ingredients: 1# Ground Beef Salt & Pepper 1 Chopped onion 2 Medium tomatoes, diced 1 Dozen corn tortilla's 2 Cans Red Enchilada Sauce 8 oz cheddar cheese, shredded

Directions: |
Directions:Fry the shells in hot oil quickly to soften, drain on paper towels Brown the ground beef with salt, pepper & onion Remove meat from heat, stir in the tomatoes & half a can of the enchilada sauce. Cover the bottom of a 9X13 cake pan with a thin layer of enchilada sauce Dip each tortilla in enchilada sauce fill with 2T of filling mix Roll up & place in pan, laying the edge side down to keep it rolled Cover with the rest of the enchilada sauce. Top with grated cheese Place in oven & bake till edges are bubbling & cheese is melted. |

Notes: Open a can of refried beans & it's a honky fiesta! This is another labor intensive meal for lots of people, hence a frequent birthday request. Tacos were Steve and Jean's favorite meal nanny made for them. The enchiladas were Rick's favorite meal his mom made!
