6 small Flour Tortillas
2 Tbs. (30 ml) Vegetable Oil
1 tsp. (5 ml) Chili Powder
1½ C. (375 ml) Cooked Chicken or Turkey, diced
¾ C. (175 ml) Old Cheddar or Monterey Jack, shredded
⅓ C. (75 ml) Jalapeño Peppers, finely chopped (optional)
1 tsp. (5 ml) Fresh Parsley, minced

Directions:
Directions:
Preheat oven to 425°F. Brush both sides of tortillas with oil; stack and cut into quarters. Fit each wedge into mini muffin cup to make 24 cups.

In small bowl, sprinkle chili powder over chicken; toss to coat. Divide among cups; top with cheese, and jalapeño peppers (optional). Bake 10 mins. or until cups are golden brown and cheese is melted. Sprinkle with parsley. Serve hot.
