- 2 cups of sweet red cherry tomatoes
- 10-12 oz block of fresh firm good quality feta cheese
- 1 sweet onion minced
- 3 garlic cloves minced
- 2 tablespoons of fresh basil minced
- 2 tablespoons of fresh italian parsley minced
- 4 tablespoons of extra virgin olive oil
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of brown sugar
- 2 teaspoons of salt
- 1 teaspoon of black pepper
- 2 tablespoons of tiny capers in brine (optional but adds a wonderful flavour to this dish)

* preheat oven to 400

- line square pan with parchment paper

- place block of feta cheese in the center

- in large bowl, mix the remaining ingredients and spoon all around the feta, excluding the top

bake for 10 minutes then broil for 20 minutes until the feta is golden and bubbly

- place on serving platter, putting the broiled feta in the center and spoon the veggies all around it

- serve warm with toasted sliced ciabatta bread slices
