2 tablespoons vegetable oil
3 tomatoes chopped
1 onion finely chopped
1½ cup uncooked rice
1- 16 ounce can pigeon peas or black eyed peas undrained
2 cups tomato sauce or chicken stock
2 teaspoons fresh thyme
salt and pepper to taste

Directions:
Directions:
Heat oil in a skillet over high heat. Add chopped tomatoes and stir well. Cook for about 10 minutes and then add onions and cook until the onions are soft. Add the remaining ingredients and boil for about 25 minutes to reduce the liquid and cook the rice.
