Dried bread cubes, buy or set out sliced bread a couple days ahead of time
(or put the bread in the oven , single layer of slices on a cookie sheet, very low heat)
Wrapped giblets from turkey cavity
2 eggs, beaten
1 stick (½C) melted butter
Hot water
½ onion, chopped
Celery, chopped
Salt, Pepper & Sage

Directions:
Directions:
Cook the giblets in water either on the stove or in the microwave
In a LARGE bowl put the bread cubes, add the chopped onion & celery, salt, pepper & sage
Add eggs & butter & stir
Add water until all the bread is (barely) moist. Just enough to stir the liquids throughout the bread.
Lightly stuff both turkey cavities (a cheesecloth pouch makes it easier to remove) do not pack

This recipe came from my grandmother Marie Dondlinger to her daughter Dora. I copied it down the month I moved home before I got married in 1972. The flavor of the giblet stuffing is absorbed by the turkey. I would never go to the time & work to cook a turkey without this stuffing. And I'm pretty damn sure Nanny never did either!
