1 Cup butter or margarine (2 sticks)
3 large stalks celery, chopped
1 medium onion, chopped
9 cups soft* break cubes
2 Tbsp. Poultry Seasoning
1/2 tsp. pepper

Directions:
Directions:
Melt butter in large skillet. Add celery and onion; cook, stirring occasionally, until tender. Stir in poultry seasoning and pepper. Remove from heat. Put in large bowl; add bread cubes and mix well until bread is evenly coated.

Put in greased baking dish; cover with foil or lid and bake at 325º for 30 minutes. Stir well, continue to bake 15 more minutes until lightly browned and crispy on top.

*Can use baked cube or crumb stuffing instead (e.g. Pepperidge Farm), but you'll need to add a can of chicken broth to stuffing to moisten cubes.

This recipe can be increased or decreased easily based upon your needs...no need to measure. Want more celery? Too many onions? Just cut back on the amount. Want your stuffing moister? Use additional butter.
