3 lb cauliflower, cut into 1½ - 2 inch florets
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1½ cups milk
6 oz Sharp Cheddar, grated
½ cup finely chopped scallion greens (optional)
½ teaspoon salt
½ teaspoon black pepper
1-2 tablespoons seasoned breadcrumbs

Directions:
Directions:
Set oven to 450º. Prep 2-quart baking dish with cooking spray.
Add cauliflower to boiling salted water, cook 6-8 minutes. Drain, transfer to dish.
Melt butter in a large saucepan, medium-low heat. Add flour to butter and whisk 3 minutes. Slowly add milk, whisking constantly. Bring to a boil. Reduce heat and simmer, whisking occasionally, until slightly thickened, about 8 minutes. Remove from heat, add cheese, scallions, salt and pepper. Stir until melted. Pour over cauliflower and combine gently.
Sprinkle breadcrumbs, bake until golden brown, about 10 minutes.
