3 large ripe bananas, mashed
⅓ cup melted butter
1 cup sugar
1 beaten egg
1½ cups all purpose flour
1 tsp. baking soda
½ salt
1 tsp. vanilla extract
¾ cup chopped walnuts

Directions:
Directions:
Preheat oven to 350º Grease 5x9 loaf pan.
Mash bananas in a medium-size mixing bowl.
In a separate bowl mix together butter, sugar, and egg and add to bananas. Add vanilla.
In another bowl mix together flour, soda and salt and add to the mixture.
Stir nuts into mixture and transfer to loaf pan.
Bake for 1 hour or until toothpick comes out clean.

Banana bread should not be undercooked. Keep checking it. If the top begins to brown too much cover with foil.
