1 3/4 pounds ham hocks, rinsed
2 quarts water
2 bunches fresh turnip greens with roots (about 10 pounds)
1 tablespoon sugar

Step 1
Bring ham hocks and 2 quarts water to a boil in an 8-quart Dutch oven. Reduce heat, and simmer 1 1/2 to 2 hours or until meat is tender.

Step 2
Remove and discard stems and discolored spots from greens. Chop greens, and wash thoroughly; drain.

Step 3
Add greens to Dutch oven; bring to a boil. Parboil (boil without seasonings) for about 5 minutes. Drain off water and cover with fresh water. Add ham hocks. They will be salty, so wait until they cook for a while to see if more salt is needed. (If you don't have access to country ham hocks, use smoked ham hocks, salt pork or other seasoning meat of your choice, but country ham hocks are great) Reduce heat; cover and simmer until greens are tender.

How to Cook Turnip Greens
The first step is washing the greens—a time-consuming task, but it’s well worth the trouble. To ease the removal of dirt and grit from the leaves, we recommend chopping the leaves first and then soaking them. It’s best to soak and rinse the leaves four to five times. The result is perfectly clean greens.
