3/4 c. all-purpose flour
1/4 tsp. salt
1/2 c. granulated sugar
1/2 c. milk
2 eggs
2 tbsp. butter
6 tart apples ( Granny Smith or other tart apples), peeled, cored, halved, cut into 1/4 inch slices
1/2 c. raisins
1 tsp. grated lemon zest
confectioners sugar

Directions:
Directions:
Preheat oven to 350 degrees.Lightly coat a 9 inch square baking dish with cooking spray. Combine flour, salt and one tablespoon granulated sugar. Whisk in the milk, then the eggs, until batter is smooth and lump free. In a medium skillet, over medium heat,melt butter and cook the apple slices with the remaining granulated sugar until tender, about ten minutes. Mix in the raisins and lemon zest, and transfer to baking dish. Pour batter over apples and bake for 40 minutes until puffed and golden. Sprinkle with confectioners sugar and serve.
