Polenta
Pesto (see recipe under misc.)
1 lb. Teleme or Jack cheese
1/2 cup fresh grated parmesan cheese

Directions:
Directions:
Butter 9x13 Pan. Cook polenta according to
directions. Double the recipe (8 cups water
and 2 cups polenta). After the polenta is
cooked, put 1/2 of the mixture in the bottom of
the 9x13 pan. Spread with pesto (1/2 - 1 cup)
Cover with sliced or grated teleme or jack
cheese. Add another layer of polenta, pesto
and cheese. Top with parmesan. Bake in
350 oven until cheese melts. Approx. 15
minutes.
