1 T. veg. oil
4-5 chicken breasts
1/2 c diced onion
1 clove garlic minced
4 c chicken broth
1 c masa
3 c water
1 c enchilada sauce
1 lb. processed cheese
1 tsp. chili powder
1/2 tsp. cumin

Directions:
Directions:
1. brown chicken breast, then shred set aside
2. saute onion and garlic, pour into chicken broth
3. mix masa and 2 cups water
4. add all other ingredients; bring to a boil
5. simmer for 30 minutes
6. serve with tortilla chips and mozarella cheese

This is from a school teacher friend of mine and I use a whole chicken which I cook in a slow cooker the night before and then debone. The secret ingredient is mozarella cheese.
