I loaf dense bread (I like a sourdough or a challah)
10 eggs
2 1/2 cups half and half
butter enough to cover bread slices
8 ounces pancetta or bacon or ham
12 ounces Gruyere or Gorgonzola or a mixture of flavorful cheeses grated or crumbled
rosemary, optional
salt and pepper
dash of Tabasco sauce

Directions:
Directions:
Butter bread slices and place 1/2 in bottom of buttered 9x13 pan.
Fry the chosen meats and sprinke half over the bread
Sprinkle half the cheese over the bread
Layer the other half of the bread, meat and cheese
Whisk together cream, salt to taste (remember that cheese is very salty) pepper and dash of tabasco and pour over the layers. Refrigerate overnight.
Bake at 350 degrees for 50 minutes or until firm and lightly browned.

For many years, I made eggs Benedict for Christmas breakfast. Then we grew, and I couldn't efficiently whip out 14 or 15 orders of eggs Benedict. So, I started making these casseroles instead. Hazel thinks it's always been that way (Strata for Xmas breakfast) and that it will never be different.
