Pie Filling
1 1/2 Cups Water
1 Cup Sugar
2 Tbsp Butter
1/2 Cup Flour
3 Egg Yolks
1/3 Cup Lemon Juice

Pie Shell - baked

Meringue
2 Tbsp Sugar to each egg white

Directions:
Directions:
In a pan over med heat, mix flour and sugar - add water and butter and bring to a boil. Cook about 3 minutes, continuously stirring.
Beat egg yolks, slightly with fork and add slowly to thickened filling slowly. so not to cook the eggs. let stand for 5 minutes. Cool until lukewarm then add lemon juice.

While mixture is cooling make Meringue by mixing 2 Tbsp of sugar to each egg white in a bowl. beat until whites "peak".

Pour cooled lemon mixture into baked pie shell cover with meringue and bake in over for 20 minutes at 300º
