6 cups peeled, quartered & sliced (any type - spy, cortland, honey crisp)
1/4 cup + 1/2 cup packed light brown sugar
1/2 tsp vanilla extract
1 1/4 cups regular rolled oats
1/3 cup all-purpose flour
1/2 tsp. ground cinnamon
1/2 cup unsalted butter, melted

Directions:

Preheat oven to 350º F.

Toss apples with 1/4 cup of brown sugar and the vanilla extract and spread it into an 8" x 8" baking dish.

Stir together the oats, the remaining 1/2 cup of brown sugar, flour and cinnamon. Pour in the melted butter and stir until evenly combined. Sprinkle this over the apples and bake for 35 to 40 minutes, until the fruit is bubbling at the edges and the crisp is evenly browned.

Cool 15 minutes before serving with ice cream.

This is a smaller recipe for Apple Crisp than the one in my first book.

I have included this because it is the correct size when used for the "Apple Crisp & Bourbon Cream Trifle" (also included in the Dessert Section of this book).
