1 TBSP olive oil
6 ounces pancetta, cut into 3/4 inch cubes ( or canadian bacon or ham steak)
1 small red onion, chopped
1 carrot, diced
2 small celery stalks, chopped
1/2 tsp kosher salt
1/4 tsp black pepper
2 cloves crushed garlic
2 medium tomatoes, diced
1 1/2 cups dried green lentils
2 cups chicken broth
1 cup water

Select Saute on the Instant Pot.
Once hot, add the oil. Add the pancetta ( or canadian bacon or ham) and stir. Cook for 3 minutes and remove the meat from the pot using a slotted spoon leaving as much oil in the pot as possible. Set meat aside. To the IP, add onion, carrot, celery, salt, and pepper and cook for 2-3 minutes until onions are translucent.
Add garlic, tomatoes, lentils, broth, and water and stir. Secure the lid.
Push Off/Cancel button. Then push Manual.
Cook on Manual for 15 minutes. When done, use a natural release. Open lid and add meat back into pot. Taste the lentils for doneness and seasoning.
Add a 1/2 cup to a cup of water if you like the soup thinner.

You can make this soup vegetarian by leaving out the meat and using vegetable broth or water. You may need to add more salt if you use water.
Serve with crusty bread and salad for a comforting meal.
