6 Large cooked & peeled potatoes (diced)

12 dill pickle slices (diced)

2 tsp dill pickle juice

1 bunch green onions (diced)

1 cup mayonnaise

5 hard boiled eggs (diced)

1 hard boiled egg (sliced)

Salt & Pepper

Paprika

Directions:
Directions:
-Combine diced potatoes, diced pickles, pickle juice, diced onions, mayonnaise, diced eggs
-Add salt & pepper to taste. Mix well.
-Potato Salad should be creamy, add more mayonnaise and pickle juice if needed
-Place egg slices around on top and sprinkle with paprika.

Cover and chill before serving.

(Best if made the day before and kept covered in refrigerator until serving)
