"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
To make simple syrup: Bring 1/2 cup water and sugar to boil in small saucepan, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.

To make the punch: Combine Champagne, rum, and pomegranate juice in punch bowl or pitcher. Add enough syrup to sweeten to taste. Mix in lemon slices, pomegranate seeds, and mint leaves.

Personal Notes:
This is delicious and beautiful also. If I'm using a punch bowl or large drink dispenser, I make an ice ring to keep the punch cold. Take a bundt pan and pour approx. 2 inches of water into the pan. Then add lemon slices, mint, and pomegranate seeds to the pan and freeze it. I pop it out and put it in the punch at serving time. If I'm serving this from a pitcher, I make ice cubes with pomegranate seeds and mint leaves in them. Add them to the pitcher before serving.
