Jamie’s Sesame French Bread Recipe

2 envelopes (2.4 oz each) active dry yeast
1 ˝ c.warm water
3 tbsp. sugar
2 tbsp. vegetable oil
2 ˝ tsp. salt
6 to 6 ˝ c. all-purpose flour
Cornmeal
1 egg white
1 tbsp. water
2 tbsp. sesame seeds

Directions:
1. Dissolve yeast in warm water in the large bowl of an electric mixer. Add sugar, oil, salt, and 4 cups of the
flour. Beat until smooth. Add more flour as needed to form a soft, dry looking ball.

2. Turn out dough onto a lightly floured surface. Knead until smooth and elastic, 8-10 minutes (or knead in
mixer for 10 minutes)

3. Place dough in a greased bowl and turn once to coat. Cover with saran wrap and let rise until double in size,
2 to 4 hours. Punch down dough, cover, and let rise again, 1 to 2 hours.

4. Beat together egg white and 1 T water. Grease 2 baking sheets and sprinkle with cornmeal. Turn out dough
onto lightly floured work surface. Divide in half. Roll each half into a 15-10 inch rectangle. Roll up from a
long edge and seal well. Place on baking sheet seam side down. Brush tops of loaves with egg white
mixture and sprinkle with sesame seeds (these are optional, but great taste). Cover and let rise until double
in size, 1 hour. (if you wanted, you could make into smaller loaves and decrease baking time)

5. Preheat oven to 400 degrees. Use a sharp knife to make 4 shallow cuts across the top of each loaf
(Optional). Bake for 25 minutes, or until lightly browned. Cool on wire racks.
