24 oz. white button mushrooms
1 cup bread crumbs
1 cup grated Parmesan cheese
1/2 cup chopped parsley leaves
2 teaspoons of minced garlic
2 eggs
Extra virgin olive oil
Salt and pepper

Directions:
Directions:
1. Heat oven to 400°F.

2. Wash the mushrooms thoroughly. Trim the bottom of the stems and remove from the mushroom cap. Chop the stems.

3. Combine stems in a bowl with bread crumbs, cheese, parsley, salt and pepper to taste, garlic, and eggs.

4. Stir in 4 tablespoons of olive oil.

5. Grease a baking sheet with oil.

6. Stuff each mushroom cap with the mixture and bake for about 15 minutes, until brown on top.

7. Let cool for a few minutes and serve.
