1-2 tablespoons Canola oil
1 cup baby carrots, halved
1 cup chopped onion
2 garlic cloves, minced
7 ounces turkey kielbasa, halved lengthwise and cut into ˝ inch pieces
4 cups fat-free, low-sodium chicken broth
˝ teaspoon dried Italian seasoning
˝ teaspoon black pepper
2 15 oz. cans Great Northern beans, drained and rinsed
1 6 oz. bag fresh baby spinach leaves
Salt to taste

1. Heat canola oil in a large saucepan over medium-high heat. Add carrots, onion, garlic and kielbasa; sauté 3 minutes, stirring occasionally.

2. Reduce heat to medium; cook 5 minutes, stirring occasionally.

3. Add the broth, Italian seasoning, pepper and beans. Bring to a boil, reduce heat, and simmer 5 minutes.

4. Place 2 cups of the soup in a food processor or blender and process until smooth. Return pureed mixture to pan. (Note: use an immersion blender if you have one, pulse it 5 or 6 times in the pan to achieve the same effect.)

5. Simmer an additional 5 minutes. Remove soup from heat.

6. Add the spinach, stirring until spinach wilts. Test for salt and add if needed.
