3 eggs
1. vegetable oil
2 to 3 pears, peeled and grated to make 2 cups
1 1/2 c. sugar
1/2 tsp freshly grated lemon rind
1 tsp. vanilla
2 c. flour
1/4 tsp. baking powder
1/4 tsp.baking soda
1/2 tsp. cinnamon
2/3 c. chopped walnuts

Directions:
Directions:
Preheat oven to 325. Beat eggs and slowly beat in oil.
Add pears, sugar. lemon rind, and vanilla. Sift dry ingredients and add to pear mixture, stirring just to moisten.
Stir in walnuts and pour into 2 buttered and floured 8" loaf pans.

Bake for about 55 minutes.
