3 boxes frozen winter squash
1 vidalia onion, chopped
8-10 cups water
8-10 tsp consumme powder
1/2 cup soy milk
salt and pepper to taste

Directions:
Directions:
In a soup pot, over a medium flame, sauté onions in a little bit of oil. Once the onions are translucent, add the water , consumme, and boxes of squash. Bring the soup to a rapid boil, then lower the flame to simmer. Let the soup simmer 30-40 minutes. Add salt and pepper to taste. Using an immersion blender, blend the soup for 30 seconds. Add soy milk and mix through. Enjoy!
