1 1/2 - 2 pounds stew meat, cubed roast or steak
8 ounces fresh whole mushrooms quartered
1 medium to large onion sliced thin
1-2 garlic cloves chopped
2 medium carrots finely diced in small cube shapes (optional)
5 Tablespoons butter divided
2 Tablespoons Olive oil
1/4 - 1/3 cup wine (optional)
2 1/2 cups beef broth or stock
1 tablespoon Worcestershire sauce
3Tablespoons all purpose flour
1 1/2 -2 cups sour cream (to taste)
1/4 teaspoon Dijon Mustard (optional)
salt & pepper
2 pound bag wide egg noodles cooked according to directions

If using roast or steak cut into cubes (large enough for about 2 bites per piece). I marinate the beef for at least an hour at room temperature or over night in the frig. In a gallon ziplock bag I put 1 cup left over coffee or tea, 2 -3 Tablespoons Worcestershire Sauce and water to almost cover meat. Or you can use 1/3 - 1/2 cup wine, Worcestershire Sauce and water. The caffeine and the acids in wine or Worcestershire are tenderizers. Occasionally turn the bag of meat over to insure that all the meat cubes get a good soaking.

Season meat with salt and pepper. Heat large heavy skillet and add 2 Tablespoons Olive oil. Add half the meat to the pan and brown. Remove the first batch to a bowl and repeat till all meat is browned. Add more oil if needed. Set meat aside.

Put 2 Tablespoons butter in the pan. When melted add all the vegetables. Add salt & pepper to taste. Cook until the mixture is golden, about 5 minutes. Put vegetables in with the meat.

In same skillet on medium heat melt 3 Tablespoons butter add 3 Tablespoons flour and stir allowing flour to begin to brown. Turn off the heat and add the wine and 2 cups broth/stock. Stir and scrap the bottom of the pan then turn the heat back on to medium. Use a wire wisp to mix well making a smooth gravy. . Remove from heat and add the sour cream and Dijon, stirring continually .Cook 2- 3 minutes. Add the meat and vegetables and stir over low heat. Cover with lid and allow to a simmer to incorporate flavors. Taste and adjust seasonings as you like. Serve over egg noodles

We love Stroganoff. You can also do this in a crock pot. Do not add the gravy or sour cream until 20 - 25 minutes before serving.
