3 cups self-rising flour
3 Tbsp. sugar
1 can or bottle of beer
butter for greasing loaf pan

Directions:
Directions:
Mix ingredients to form a manageable dough, fairly sticky, not stiff. You may have to add a little more flour to enable handling. Knead briefly and let rise in a loaf pan for an hour or so. Bake at 400º for 50-60 minutes. Cool a bit before slicing.

In the "early days" of serving duck dinners to 40 people, I would mix up 8 or 10 loaves in a short time. I just memorized 3 3 1 and didn''t look up.
