2 slices of white sandwich bread, torn into pieces
1/2 cup milk
2 eggs
1/2 tsp sage
1 tsp thyme
1 Tbsp. salt
pinch of nutmeg
pinch of paprika
3/4 cup grated Parmegiano-Reggiano cheese
1/4 cup bread crumbs
2 Tbsp. unsalted butter
1 onion, diced
4 cloves garlic, minced
1.pound ground lamb
1/2 pound ground pork
1/2 pound ground veal
For Glaze:
3/4 cup red wine
1/4 cup sugar
1 tomato, chopped

Preheat oven to 350º. In a large bowl, combine the bread with the milk and mash. Add the eggs and spices and stir. Add the cheese and bread crumbs and combine thoroughly

In a medium skillet, melt the butter. Add the onion and cook for about 7 minutes. Add the garlic and cook for 1 minute. Cool. Add to bowl along with the meats and knead until combined.

Bake about 50 minutes.

Meanwhile combine the glaze ingredients and boil until syrupy. Spread over loaf. Bake about 20 minutes longer. Let rest for 15 minutes
