red or yukon gold potatoes
extra virgin olive oil
½ a packet of dry zesty Italian dressing mix
garlic powder
⅓ red or yellow onion (optional)
pinch of salt
pinch of pepper
grated parmesan cheese

Directions:
Directions:
1. You can use red or yukon potatoes. Cut them up into cubes, leaving the skins on the potato.
2. Spray a light film of cooking spray on a foiled cooking sheet.
3. Add the potatoes to a mixing bowl.
4. Use about half a packet of the dry italian dressing. Sprinkle half of that portion onto the potatoes before cooking them and save the other portion for afterwards. In addition to the dressing, add the salt, pepper, and garlic powder at this time as well to the mixing bowl.
5. Drizzle the olive oil on top of the potatoes. Make sure they are coated on the potatoes along with the seasonings.
6. Place the potatoes onto the cooking sheet.
7. Cook in the oven for 45 minutes at 400º or until potatoes are tender with crispy sides. You can also take them out almost half way through and toss them around to get the other sides of the potato crisp. This makes them more evenly cooked.
8. Add the remainder of the dry dressing mix as well as the parmesan cheese to the potatoes.
9. Serve and eat!!
