3 lbs protein (boneless pork ribs or chicken thighs)
Mexican rub
Baked potato
Butter
Cream Cheese

BRAISING MARINADE CHIPOTLE SOUR CREAM
3 cloves Garlic Sour cream
1 tsp Oregano, dried Chipotle taco sauce
1/2 onion, rough chop
½ bottle chipotle taco sauce CONDIMENTS
2 tbsp chile powder Shredded lettuce
1/2 tsp Black pepper Shredded cheese
1 tbsp Salt Homemade Salsa**
2 tbsp Olive oil
1 tsp ground cumin
1 lime
Water or chicken stock

Directions:
Directions:
Make braising liquid. Place all ingredients in a blender adding enough water or chicken stock to loosen. Blend until smooth then set aside.
Bake/grill potatoes at 350F for about 1 hour. Tip: Start them in microwave to reduce cooking time
Smoke/grill the protein with until desired color reached, about 160F. Transfer to a slow cooker and top with braising liquid. Cook on low for about 6 hours or until protein is fork-tender.
Cut top off potato and remove some of the interior flesh. Place a small amount of butter and cream cheese inside potato, mixing to combine. Top with protein, lettuce, cheese and salsa.
